Elderberry Syrup: It Must Be Flu Season!

Everybody's talking about how not to get the flu and the first thing I think of when it comes to fighting the flu is elderberry syrup.  

(I am not a doctor so please consult your physician regarding the proper flu treatment for you.)

I make elderberry syrup, like so many others.  Here's what I put in my elderberry syrup:

star anise  (2 - 3)
cinnamon  (1 - 2 sticks)
whole cloves  (5 - 6)
and not shown … honey

I grow my own elderberries but am not at the point where I'm growing enough to meet our needs so, during the summer, when elderberries where a lot cheaper, I purchased enough to get us through the winter.

Since I don't really care for the taste of elderberries, I decided to try making gummy bears to see if I could tolerate the taste that way since they had a couple of added ingredients.  Surprise!  Surprise!  I really like the taste of them in gummy form so now when I make elderberry syrup, I turn it into elderberry gummy bears.  I have no trouble getting them down and like the taste very much!

These are the molds I use.

I now have a whole quart jar of elderberry gummy bears ready for use.  I keep them in the refrigerator and use as needed.

I mentioned that I grow elderberries and thought you might like to see what the beautiful flower heads look like …

It is breathtakingly beautiful when the bushes are all in full bloom!

Our elderberry bushes are starting to put on little green leaves and are in the early stages of budding out.  It won't be long before they will look just like these pictures again. 

This year I'm going to try to take some cuttings from them and root them for more starts to plant in a different place.  I've never done it before but have been told by several people that it can be done.  Wish me luck!

  1. Interesting, making your own gummie bears, problem is I would just keep eating them.

  2. Unless I missed something the recipe didn't mention star anise, whole cloves, and cinnamon. How much of each do we need?
