Lunch from the Refrigerator!

It was lunch time on a day in which I was battling an allergy issue and I wanted something warm/hot that wouldn't require a lot of effort.  So, I took myself over to the refrigerator, opened the door and had a look inside to see what my options were.

As I surveyed the possibilities, I knew what I would have ...

I laid the ingredients out on the counter ...

Put a skillet on the stove top, sprayed it down with coconut oil cooking spray and turned the eye on medium heat ...


Placed a low carb tortilla in the skillet ...


Added two slices of provolone cheese ....


As soon as I could see the cheese starting to soften and melt, I added thin slices of deli ham ...


After a minute or so, I did a fold over ...


After another minute or so, I flipped it and turned off the stove ...

I placed my hot and gooey sandwich on a plate and cut it in half.

It was quite delicious and hit the spot!

(If you are a calorie counter, as I am, this came to approximately 325 calories.)

  1. We love quesadillas at our house, Patsi! Quick, easy, and delicious. They are really good with a side of mashed avocado, sour cream, or salsa if you want to get fancy. Sauteed onions are delicious in the filling also. Basically any grilled cheese sandwich filling works in a tortilla!

    1. Kelsey, I wonder how my recently completed fermented onions would work as part of a filling. You've got me thinking!

    2. Our favorite is a few tablespoons of leftover taco meat mixed with salsa with cheese. Mixing many kinds of meat with salsa really makes a good quesadilla.

    1. Lana, whatever is raging outside in the world of allergies is really working on me, every time I step foot outside my eyes start watering, nose running and I start coughing. As my son would say, I'm really on the struggle bus this week with whatever is in the air.
