30 Day Preserving Challenge: Day 10, Fresh Pineapple

I'm a third of the way through this challenge and trying not to repeat, in my reporting, what I'm preserving even though in reality I am repeating what I'm preserving!!!  That statement is a mind twister isn't it!!

On day 10 of this challenge I'm preserving pineapple …




We got these pineapples at Sprouts about a week ago.  They were 2 for $5 and were scheduled to go on sale for $.98 each the very next day.  My dear husband, having the attitude of 'you won't know if you don't ask' asked if we could get them for the sale price since we lived an hour away and wouldn't be able to come back the next day.  Surprise!  Surprise!  The produce manage said yes, so we purchased a case of 7.  They were on the green side so we brought them home and let them ripen for about a week.


This morning I canned them … 13 pints in all!
One of the 13 pints didn't seal so I'm going to dehydrate its contents!

How will I use the 12 pints that did seal, just like canned pineapple I would buy at the grocery store, of course!

How will I use the jar I'm going to dehydrate, as a sweet treat every now and then, it's supposed to be like candy!!!  I like candy!!!


I saved the tops, which was the reason I wanted to buy the pineapple in the first place, because I want to plant them and try growing our own pineapples.  Yes, I know it will take 2 years to get a harvest, but I'm up for it!

  2. Yum, I love pineapple. I never thought to can it. I'm going to look into that.

    As for growing them from the tops, my crazy college roommate decided to try that....in a sunroom in her home in MONTANA!!! She needed one more plant for a pot and all she had was the pineapple top. So, she stuck it in there and guess what happened? She's got a tiny pineapple growing from her new plant! In MONTANA! I couldn't believe it! Good luck! She said it's a lovely plant.

  3. Patsy, try slicing the pineapple very thinly and drying it. They turn into 'flowers'. So pretty as cake toppers. You are on FIRE, woman! Mimi xxx

  5. when you do plant the pineapple tops out be sure to give them plenty of growing room, they are big plants (very large bromeliads!) home grown is best as you leave them on the plants to ripen (they don't actually keep ripening once picked) so they will taste even better! good luck!

  6. I know I am late to comment, but we have been gone. I have a pineapple growing right now. It takes 6 months (about) from bloom to fully ripe pineapple. It turns a golden yellow when ripe and is so sweet. It is really good! The plants do get very large. I put them in pots and bring them in when we have a freeze. When you eat the pineapple, you have a new top to plant. My pineapple tops looked really bad for quite a while after I planted them, but I continued to water them and they finally began to grow. Good luck with your pineapples. Keep us posted on how they do.
