30 Day Preserving Challenge: Day 13 ... Canning Carrots

I was recently asked to make a carrot cake for  a lady in our community, so when I purchased the carrots needed, I purposely bought a large bag!



My intention was to can what I didn't use and that's what I did …


I got 9 pints and a carrot cake out of the bag of carrots!  That's pretty good if you ask me … I think I paid $3.98 for the carrots.  That breaks down to $.44/jar without including the 3 cups of shredded carrots I used in the carrot cake!  In my opinion, that was $3.98 well spent!
