30 Day Preserving Challenge: Day 12 ... Re-Canning Bottled Lemon Juice

Recently I purchased 4 bottles of lemon juice like the one you see in the picture below.  I know that it will take a while to use that much lemon juice (even canning as much as I do) and I didn't want it sitting in the plastic bottles long term, so I decided to re-can it.




I washed and got the pint jars ready and then filled each to the shoulder with the lemon juice.  


I processed them in a water bath canner for 30 minutes and ended up with 14 pints from the 4 bottles.  These will keep long term on my pantry shelf without worry of the juice being affected by the plastic bottle and that makes me very happy!

    I cut and froze twelve packages of strawberries today. I saved enough to make a strawberry pie tomorrow. Yum.

  3. We don't use lemon juice that often either. One day I needed some for a recipe opened the bottle, which had been opened before, and discovered BROWN lemon juice. YUK! Needless, to say I'm going to be doing this. Thank you.
