Remaking Leftover Meatloaf

First, let me say that I got the idea for making this dish using leftover meatloaf from a video from Noreen's Kitchen Here's my version of her dish ...





I sautéed green peppers (harvested from my garden) and onions from my pantry in a dab of butter.




When the onions and peppers were starting to soften, I opened up a pint jar of home-canned mushrooms and added them.  I continued to sauté all of it together for another 10 minutes or so.




I moved the sautéed peppers, onions and mushrooms to one side of the skillet and browned the leftover meatloaf on both sides being sure to heat it all the way through.




In a baking dish I placed the browned meatloaf pieces down first ...
Layered the sautéed onions, peppers and mushrooms on top of the meatloaf ...
Sprinkled mozzarella cheese on top of the areas where the meatloaf was covered ...
and melted the cheese in the microwave.

Both my husband and I really enjoyed this meal and will be making it again when we have leftover meatloaf!

    I never have leftover meatloaf since there are 4 of us, and dh keeps telling me, I need to make bigger meatloaves. ;)

  2. eat it cold, warmed up with peppers, onions and mushrooms served over mashed potatoes.
    turn it into a sub, crumble it for pasta sauce, hamburger pie or chili (chili can go over rice or pasta also.

    crumble and add cream of mushroom soup and horseradish for poor man stroganoff.

  3. That looks so good! My husband loves cold meatloaf sandwiches for lunch, just meatloaf, mayo and bread. That usually takes care of our leftovers!...Glenda

  6. I'm so glad you shared this post. I love meatloaf. My husband and I normally eat the leftovers up until they are gone. (I'm with Lana - I love a meatloaf sandwich). I will be trying this recipe - it seems to be a great way to use up leftovers. Thanks, Cindy Jane

  8. Your meatloaf makeover looks delicious! I make individual meat loaves so dont usually have leftovers. I make a large batch and freeze them and just take out the number needed. I melt butter in a baking pan and place potatoes cut in half lengthwise cut side downin the butter. These bake in 30 minutes along with the little neatloaves. Meat loaves are thawed before baking.

    1. becka, that's a really good idea to make individual loaves. When you cook the potatoes like that along with the meatloaves you are saving time and money! Great ideas!
