Preserving Cranberries!

 I've had such a busy week that I've barely had time to sit down at the computer and post anything, so get ready for several posts over the next few days as I play catch up starting with this one ...


With the sales we've been finding I've been preserving food for the pantry almost non-stop.  This is the time of year to watch for sales, be alert!!!  This is a picture of cranberry concentrate I canned (recipe in the Ball Blue Book) from cranberries purchased at the store.  Since cranberries are a seasonal item I may go back and purchase more to do a repeat of the picture above.

When I get ready to open a jar I'll add 3 - 4 pints of water to the 1 pint of concentrate depending on how strong a cranberry taste I want or how I plan to use it.  I didn't add any sugar or other sweetener when I canned this concentrate so when I get ready to use it I'll add the sweetener of choice in the amount we desire if needed.

In the front on the right is cranberry powder.  I took the pulp from the cranberries once I had cooked them down, drained off the concentrate and then put the remaining pulp in my dehydrator to dry.  Once it was dry I powdered it in my Nutri-bullet machine, vacuum sealed it in this pint jar using my Food Saver and a used lid, then labeled it.

I'll use the powder for baking and flavoring purposes.

  1. Interesting. I might do this. I usually dehydrate cranberries and eat them for snacks or for putting in dressing which rehydrates them. The lowest price I have found $2 bag, not low at all.

  2. That sounds like a great plan. Aldi has cranberries for 95 cents this week so it could be very cost effective for me. Thanks for sharing.
