Preserving Pears: Pear Butter

Do you see those pears hanging on that tree?  They are now sitting in three 5-gallon buckets in my kitchen waiting to be preserved!

The owner of the pear tree told my hubby we could have them if we wanted them, so we took a long-handled hook and a net and proceeded to get them off the tree.

I'm sure it was a comical sight, in fact we even got tickled at ourselves, but the end result was that we got those pears down out of that tree without the use of a ladder, into buckets and home with us in a span of about an hour!  Not too bad for a couple of 'senior citizens' if I do say so myself!

The first thing I did was decide how I wanted to preserve them and chose three methods: (1) pear butter (2) pear preserves and (3) canned pears

Here's how I made pear butter today ...

I started out by selecting the pears that were overripe or had spots that were going bad.  I washed and peeled those then cut them up into cubes.  I did 8 cups for this recipe and put them in a stockpot along with 1 teaspoon of lemon juice and about a half of cup of water.

After about 20 - 25 minutes of cooking on medium heat and stirring occasionally this is what it looked like.  I got out my immersion blender and turned it into puree.

Next, I added 1 cup sugar, 1/4 cup brown sugar, 1/4 cup of apple butter (the recipe called for apple juice, but I didn't have any, so I substituted apple butter for apple juice.  In this recipe it worked just fine.) 1 teaspoon cinnamon and 1 teaspoon vanilla.

I put it back on the stove and cooked it until it thickened which was about another 15 - 20 minutes.

I had enough to fill these 4 half pint jars and then processed them 15 minutes in a water bath canner.  Of course, I had to do a taste test ... I was not disappointed ... it was quite GOOD!

I'll use this pear butter in baked goods, on toast or a biscuit, when cooking pork, etc.

Tomorrow, I plan to make pear preserves.
