Let's talk about the extra work first!
The produce we brought back from our overnight trip away that I talked about in my last post had to be preserved.
I started with this box of peppers, yes, they were as big as they look in the picture! Can you believe we paid $7 for the whole box. There were 36 peppers in the box!
Cooked and ready to serve... and yes, they were delicious!
I'm still working on my version of the #everylittlebitcountschallenge, so this counted as day 23 ... hang on, I'm not done, that's only the peppers!
On day 26, I took two family packs of ground beef out of the freezer, thawed them and made multiple meatballs and hamburger patties for the freezer. I cooked both the meatballs and the hamburger patties since the ground beef had been thawed. I don't have pictures of either, this is about when my asthma flare up began and I was pushing myself to just get done so I could call it a day.
I'm still working on cleaning, inventorying and reorganizing my pantry. Here's a snippet of one corner that's completed! I try to work on this project at least a couple of times a week, more if I can manage it. Sometimes, it's just a few minutes and sometimes I can carve out more time, but I continue to make progress and that makes me happy!
I've been trying to get back to sewing or doing something sewing related at least 15 minutes per day. The past two weeks I managed 6 of the 14 days. Being sick slowed me down, but I'm determined to knock out some 'been working on this too long' projects this winter plus some new things I want to stitch up. While I don't have any completed sewing projects to show you, I can show you the Halloween treats I made and mailed to my grands last week ...
I think that about gets us caught up. I still have quite a few apples to work up so that's where you'll find me this next week ... in the kitchen with the apples!

DeleteYou have been super productive. Those Halloween treats are very cute and I am envious of your pantry. I have a very small kitchen and things are put away in cupboards, which means that I have to keep lists of where everything is stored in order to find it.
ReplyDeleteI had apple problems this week. I had a couple of small boxes of them stored in the garage but when I went to get some for making chutney the boxes were nowhere to be found! My husband had moved them but had then put some other stuff in the garage and couldn't remember exactly where he had put them. I managed to put my hands on some other apples and the boxes turned up later in the week, but only after a major garage rejig. Every time I open a jar of that chutney I will be reminded of 'The Great Apple Hunt of 2025'!
Tracy, my pantry is a 4 x 4 closet turned pantry. One of the things I strive to do is keep everything where I will know with a glance what I have and where it's at. I've spent years doing exactly what you're doing now so I'm counting this closet turned pantry as a blessing!

Kim, I used to could charge right through with projects and get them done in no time, but not any more. Now I just keep working at it a little at a time until I get it done! This way works too, the end goal is accomplished and that's the important thing ... or it is to me!

DeleteI hope your asthma is doing much better. Not much happening here but I am grateful for my pantry. Hubby got his meds in the mail and his expensive name brand drug is now available in generic so no copay!
ReplyDeleteLana, season changes are not always good for people with asthma, but I keep muddling along, rest when I need too and listen to my body.
DeleteI am so grateful for my pantry as well. I wish everyone would see the benefits of building up and maintaining a well-stocked pantry. I believe it would take away quite a bit of the 'food' anxiety we're seeing right now.
Yeah for the break on the expensive meds! God is good, isn't He, He makes a way for those who are faithful to Him.
