I love our little home, it's perfect for us! There's warmth and love within its walls and yes, mason jars, home preserved foods, herbs, books, WIP projects, lots of snuggly quilts, a swing on the front porch and a rocking chair nearby! We call it home and we call ourselves blessed. We give God the glory for He has had and continues to have His hand in it all!

Sourdough Bread Recipe

I revived Prudence (my sourdough starter) again and am making bread on a weekly schedule for a while.  The first week I make 2 pans of rolls and 1 loaf and we used the rolls for slider type sandwiches. (Only one pan of rolls is shown in the picture below.)

It was so convenient to have these rolls on hand that when baking day rolled around again I decided to make all the dough up in rolls. 


After sharing pictures of my efforts with others, I've been asked to share the recipe, so here you go ...

I watched these video's from Alderman's Farm and wrote down what she did:

Easy Sourdough Start to Finish, One Loaf of Sourdough Bread

Here's what I wrote down ...

 (makes 3 loaves)

1/4 cup sugar

1 Tablespoon salt

1.5 cups warm water

1 cup sourdough starter

 1 Tablespoon yeast (optional)  

1/2 cup oil

6 cups flour

Knead dough and let rise for roughly 12 hours  (It only takes a couple of ours for the dough to rise at my house when I add yeast.)

Shape into three (3) loaves and let rise for 3 hours (It only takes about an hour to an hour and a half at my house if I've added yeast.) 

Bake at 350 degrees for 30 minutes

Sourdough Starter Day #4: Reviving Prudence!

 Prudence (sourdough starter), in her revived state, is now 4 days old and bubbling away!


She is doing everything she's supposed to do in the time frame that she's supposed to.  The final test though, will be to bake something with her. In addition to bread, I'm planning on baking muffins and pizza crust (I'll use the 'discard' part for the muffins and pizza crust.)  The muffins and pizza crust will go in the freezer for a quick snack or meal.  

If baking with her is a success, then I'll call this whole thing a huge win!  I plan to bake on Monday but until then I'll continue feeding her every 12 hours leaving her in her designated spot where she seems very happy!

Sourdough Starter Day 3: Reviving Prudence!

 I'm really beginning to think that this journey of rehydrating and bringing back to life my 2 year old dried sourdough starter, Prudence, is going to be a success!

Since yesterday's post, I've fed her 2 more times without discarding any, according to the directions found HERE.

This morning I got up, checked on her and this is what I found ...


She's alive ... according to the instructions this is exactly what she is supposed to look like at this stage of bringing her back to life!


The next step was to discard all but 4 ounces (about 1/2 cup) and feed it again.  This time the instructions said to feed it 4 ounces of lukewarm water and flour.  That's half a cup of water and almost a full cup of flour (I got my scale out and measured both!)


I moved Prudence to a new container and gave her a new bonnet.  This time, if all goes well, she's supposed to really expand as in triple in size.

Sourdough Starter Day 2: Reviving Prudence

Yesterday, I shared in this post that I was reviving dried sourdough starter that had been sitting on my pantry shelf in a vacuum sealed jar for 2 years. I wasn't sure if it was still viable!  I also shared that I had named her Prudence way back several years ago when she was created.

This morning I checked on Prudence and this is what I found ...


Prudence is starting to bubble!!!  That's what she's supposed to do!!!

I still have a few more hours before the next step is to be done, but right now I'm more hopeful than I've been that Prudence just might make it!

I'll update this post later in the day after I do the next step and share what she looks like and how she's behaving at that point.

Sourdough Starter

I've had the same sourdough starter for several years, but I don't use it all the time.  In fact, Prudence (the name I gave my sourdough starter) has been sitting on my pantry shelf in a dried state in a vacuum sealed jar for over 2 years. 

Yikes, I didn't realize it had been that long!

One of my goals for this week was to reconstitute/wake her up, see if she's still viable, if she's still viable use her for a few weeks and then put her back in a dehydrated state where she'll sit on my pantry shelf again until the next time.

The first step in waking Prudence up is to measure out 1 ounce of starter (I use this scale) and put it in a jar.  If you don't have an accurate scale you can measure out 1/4 cup of starter pieces.

After I have my starter pieces in the jar I add 1/4 cup of lukewarm water.  I used room temperature well water.  You don't want to use water with a lot of chlorine in it.

The water should barely cover the sourdough chips and you may need to tamp them down a bit to get them in the water.

Every once in a while I'll give it a little stir until it's completely rehydrated.  The rehydration process could take up to 3 hours so I need to be patient.

Will Prudence be a viable starter again ... we're about to find out!  Stay tuned for the next installment!

Update 3 hours later:  


Prudence is completely rehydrated and ready for the next step ...


... which is to stir in 1/4 cup all purpose flour.


She gets a bonnet next and I set her in my dehydrator for up to 24 hours to see what she does.  My first preference was to set her in my oven and turn on the light, but since the light bulb in my oven needs to be replaced I went to my next option which was the dehydrator.  Thankfully, my dehydrator has a bread rising option because it's a bit cool for Prudence to work sitting on the counter right now with the cooler temperatures outside affecting the inside temp.

Reviving Prudence!


Do you remember Prudence, the sourdough starter I made from scratch last year and yes, I named her.  Last fall, I put her to rest by drying her and then grinding her up into a powder.  She has been in this state until the last few days when I removed a small amount and started the process of reviving a portion of her.  (She's been sitting on a pantry shelf at room temperature in her ground up state since last fall. She has not spent even one night in the refrigerator!)

We don't eat much bread, baked goods or pastry type concoctions so baking bread on a regular basis is not needed.  However, I do not want Prudence to die or become ineffective so every once in a while I revive her, bake a few loaves for various purposes and then put her back to sleep.

I'm in the process of doing that now!  I plan to make some bread crumbs and vacuum seal them in jars for future use.  Also, now that it's summer the twins will be visiting more often so our need for bread will increase.  I'll bake a few loaves, slice them, package them and freeze them individually, I'll take slices out of the freezer on an as needed basis, thaw and use as needed.

Prudence has woken up really well … Here are the instructions I used for 'waking' her up.
