Canning Chicken

During January and February I try to do what I call my 'winter preserving.'  Summers are filled with preserving the garden's bounty which keeps me busy, busy, busy.  In the winter though, when things slow down a little … well, that's when I concentrate on meats, broths and such.

A friend texted me last week and told me that a local grocery store had their chicken leg quarters on sale for $.39/lb.  Since I was already in town, I went to the store and sure enough there they were.  As an added bonus they were antibiotic and preservative free!  I made my purchase, brought it home and set to work!



The first thing I did was rinse the chicken off and check it for any areas that look questionable.  It all checked out good so into a big pot it went.


Several hours later this is what it looked like!  I canned 14 quarts in all but one didn't seal so … 
(Please consult a reputable canning book for instructions on canning and preserving all foods.)


… we made a pot of chicken and made-from-scratch dumplings for our main meal of the day!  It was so good and we had enough left over for another meal!

    Great deal on the chicken. I like your thoughts on winter preserving. We currently have a freezer full of venison, so Colton has been giving the deer he has harvested this year to friends without access to hunting. But we just talked about harvesting another one for us to can and put in our pantry. My father-in-law agreed to let us use his stove (as ours is a glass top), so we just might do it.

    1. Kelsey, having home-canned meat in our pantry makes meal prep so much easier and quicker! What a sweet thing for you and your husband to do, sharing the deer with those who don't have access to hunting!

  3. Mmmmm.....chicken and dumplings. I think they need to go on my menu soon! That is wonderful to have all that chicken ready to go.
