Pecan Cookies

I've wanted to make these cookies for a long time and I finally just did it!  I'm so glad I did, they are fantastic, if you like pecans, and I do.




I wrote down the recipe after watching this YouTube video.


I don't remember how many the recipe made, but I put them in these two containers and snacked on them all week.  I think I got around 16 cookies from the recipe, but don't remember for sure.

Here's the recipe as I wrote it down and additional notes I added:


2 cups pecan pieces
¾ cup brown sugar  (the next time I make these cookies I’ll reduce the brown sugar to ½ cup to see how much of a difference it makes.)
Place pecan pieces and brown sugar in a food processor, ‘pulse’ together until pecan pieces are more like meal and the brown sugar is thoroughly incorporated
Mix 2 egg whites into above pecan mixture, stir by hand, until well mixed
Drop by spoonful on parchment paper (I used this to drop the mixture.)
Cook at 375 degrees for 13 – 15 minutes (be careful and don’t overcook)
Cool and try not to eat all of them in one setting!  Yes, they are that good!
