30 Day Preserving challenge: Day 17, Kosher Dill Pickles

Our cucumbers are almost through bearing due to the heat and humidity.  We've been sharing them with others, enjoying them fresh, in salads and today I'm making kosher dill pickles …



These cucumbers were picked fresh this morning!


I cut them up into half spears and filled the jars.  Then I made a solution using Mrs. Wages Kosher Dill Pickle seasoning packet and water-bathed them for 15 minutes according to the instructions on the packet.


Four quarts of kosher dill pickles fresh out of the canner!  (I didn't have enough for a full canner.)  
This is the first time I've made pickles using a Mrs. Wages Kosher Dill Pickle seasoning packet.  The seasoning packet comes highly recommended, so this year I decided I would give it a try.  I won't make any more until we've opened a jar and tried them. I don't want something in my pantry that we won't eat,  space is just too precious to waste!

    Have I heard somewhere that you can add a grape leaf to make them crunchy/? lol, thinking out loud! I can never find small cukes to pickle, they are all too big!

    1. Barbara, I've read that about grape leaves too, but I've never tried it. I'll open a jar of the pickles in a few days and try them. I hope they are crunchy!

    I like Mrs. Wages products, I use the refrigerator pickle mix, very good, stays crispy cause in the fridge. But they all are good to use... I need to get some today, I have been making my own brine, vinegar , water and canning salt and dill.. have not tasted any yet..

    1. bamabear44, this is the first Mrs. Wages product I've used, but it came highly recommended! Can you give the ratio of vinegar, water, canning salt and dill that you use in your recipe?

    2. I used 8 cups water ,3 cups of vinegar, and 3/4 cups of canning salt.. added dill... I taste the mixture before adding to the pickles . lots of dill pickles call for sugar, I don't like dills with sugar, I like sweet pickles.. I think you can mix it up to your taste. I am having SO many cucumbers this year, planted too many. LOL

  3. We have lots of cucumbers too! I have used Mrs. Wages in the past and liked them very much. We like her Pasta sauce and Chili base mixes also, we used them last year with our homegrown tomatoes! Recently we cannned green beans and some pinto beans. Can't beat pintos with cornbread!

    1. countrynana, I'm with you, there just isn't anything better than pintos and cornbread!!! I knew Mrs. Wages had pickle seasoning packets but didn't know about the pasta sauce and chili base mixes!

  5. The grape leaf trick in with the dill pickles to make/keep them crispy works here in South Louisiana! Have used the odd leaf here often!Laura
