30 Day Preserving Challenge: Day 16: Chicken

I needed to free up some space in the freezer so took some chicken out, that we had gotten on sale last fall, and canned it …




I washed, sterilized the jars and then filled them with the raw thawed chicken … with the bone in!


I added a teaspoon of canning salt to each jar, added the chicken legs, filled the jars with water, cleaned the jar rims and added the lid and ring.  Into the pressure canner they went for 90 minutes at 10 lbs pressure …




Fresh out of the pressure canner … I added 7 quarts of chicken to my pantry and freed up some space in my freezer at the same time!!!

I'll use the drum sticks to make chicken salad, chicken sandwiches, in casseroles, barbeque chicken, etc.  The broth in the jar will be used in whatever I'm cooking at the time if at all possible, if not, it will be frozen until it is needed.

  1. Oh thats cool. I have done lots of canning but never meats as I have never owned a pressure canner. Thanks for the info on how you did it...

    1. Tammy, you can also can chicken off the bone, which I've also done. Canning meat is just as easy as canning anything else but you're right, you must use a pressure canner.

  2. I love having chicken in jars in my pantry!

    If the chicken is not falling off the bones you can flour it and brown it in some oil. My Grandma made fried chicken from precooked Chicken and it is delicious.

  3. Beginning canner question, Patsy: So, now the drumsticks are cooked? I've never tried canning meat before, but will give it a whirl one of these days. I like that it freed up freezer space for you.

  4. We canned chicken for the first time last year. We really like having it on hand.

    Yesterday, I picked a whole cookie sheet of raspberries and they are in the freezer. Today, I will put them in baggies. I was happy to get so many
