Breakfast Cookies

Let me say up front that I do not know where I got this recipe!  (I've had it a long time.) I know that it came from somewhere online and that I have tweaked it a bit!

I also know that it's a delicious and healthy 'grab and go' breakfast food/cookie!

Breakfast Cookies
1 and 1/2 cups oats  (I ran the oats through my food processer) 

3/4 cup self-rising flour
1 egg
1/3 cup maple syrup  (could also use honey)
1 tsp vanilla  (I used my home-made vanilla)
2 tbsp coconut oil (melted)
Mix all this up really well (I ended up using my hands towards the end as the mixture was getting hard to mix.)
Add in  1/4 - 1/2 cup nuts (I used black walnuts because that's what I had, but any nut would do)
Add in 1/4 - 1/2 cup dried fruit (I used cranberries, because, again, that's what I had) 
Mix really well (I used my hands)
Form into balls, place on parchment paper lined baking sheet and flatten.  These cookies will not rise much at all so keep that in mind when you're flattening them.
Bake at 350 for 12 – 14 minutes or until golden brown.
Remove from cookie sheet and place on a cooling rack until cool.  (These were even better the next morning for breakfast after they had set in the refrigerator overnight!)
