30 Day Preserving Challenge: Day 28 ... Beets

One of the things we came away with from the Mennonite produce auction we attended was beets.  We love beets and my pantry was completely out of them so when I saw beets at the auction, I requested my husband bid on them.  

He got the bid and the beets came home with us!



I made pickled beets … we like to eat them as a side dish.


and I canned beets!  

We like to heat these up and add a pat of butter.  They make a delicious side!

  1. I only pickle or freeze beets and did not do any at all this year. Perhaps if I can get a good deal on a few at the Farmer's market.

    I mostly freeze veggies and fruit now. I still make jam, jelly, pickles and relish though.

  2. I love picked beets! I have a jar in my fridge right now that I have been eating bit by bit. My husband would not even try them so they are all for me. In my husband's defense, he was raised on a very limited number of foods because that is all his Mom knew how to cook so he did not learn to like a wide variety of foods. My late MIL grew up with servants and when she got married to an average guy who would never be able to hire help she suddenly arrived in a place of reality and she did not know how to do a single thing to keep house or cook. In the end she did pretty well learning all on her own and making many mistakes along the way.

  3. I am one of those people who do not like beets. they taste like dirt to me, no matter how I make them. However, my DH likes beets, and I like the beet greens - so we're all good, and no waste. I have heard that its a genetic thinkg about beets tasing like dirt to some people, just like some think that cilantro tastes like soap.

  4. I can beets and pickled beets, my mother in law does also. I have a couple friends and several neighbors that do also. Most of us grow them but this year between flood and drought there are slim pickings

    1. Chef Owings, we didn't grow these this year either but I'll be ready to plant in February for next year's harvest.
