(I HAD to get these peas preserved before Hurricane Dorian comes calling later in the week!!!)
Recently we were able to purchase 2 1/2 bushels of purple hull peas at a fairly decent price. I shared in this post about how we got them shelled! We really did have a good time!
Once we got the peas back to my house I dumped them into the kitchen sink and gave them a good wash.
I filled quart jars about half full of raw peas, (I used the raw pack method) added water up to the neck in each jar and added a teaspoon of salt to each quart. I then processed them for 50 minutes at 10 lbs of pressure. (The pressure may need to be different where you live.)
Here's the end product fresh from the canner, don't they look good!!! These will be delicious with a bit of the banana pepper relish I made earlier in the summer!

I remember my mom hand shelling and freezing purple hull peas every summer.i helped shelling but it sure wasn’t my favorite thing to do.

ReplyDeleteLoved my summers shelling peas with mom and my grandmother. Both ladies always put the peas in a clean cotton pillowcase and kept in the freezer. When ready to have them for supper, mom would get out what she needed, wash them and cook. They were always so good. I store mine the same way. Cindy Jane
