I'm Finished With the Ground Beef!

 In addition to the 6 meatloaves I froze yesterday, today I added the following 'ground beef' dishes to the freezer part of my pantry …

104 meatballs  (for meatball sandwiches, casseroles, spaghetti and one of our favorites ... mushroom soup/meatballs)

7 quarts of browned ground beef with onions (for making okra soup, chili, hamburger soup and casseroles)

12 hamburger patties (for hamburgers)  (I separated the hamburger patties by sheets of parchment paper.)



3 quart bags of uncooked ground beef (for casseroles or anything else needed)

I finished preserving all the ground beef today and added several meat meals to my pantry ... now that's getting ahead in the kitchen!

In making ahead all of these meals I used several things from my pantry that I already had on hand …

green onions we grew last spring that I chopped and froze ...

2 cans of Ro-tel that we had purchased a while back that were just beyond their 'best buy dates' ...

seasoned bread crumbs that I made from leftover bread ...

and eggs from our chickens.

Keeping a well stocked pantry makes big cooking days like this less expensive and is a good way to use up items that need to be used.

Our Vicky Challenge Savings today were pretty good and came in the form of metal roofing for the woodshed extension hubby is working on.  A dear family friend gave him enough metal roofing to cover the extension, savings to us approximately $175.  Add that to previous savings ($604.68) and the new total is $779.58.

Our high temperature today was 57 ... a cool 57!

Update 1/30/2020 … I've been asked to share my meatloaf recipe.  It's more a method than a recipe but I've tried to put it in recipe form ...


Meatloaf

1 lb ground beef

Chopped onion to taste (I usually put about ¼ cup)

1 - 2 eggs (beaten)

Approximately 1 cup seasoned bread crumbs (I usually make this myself and keep it on hand stored in the refrigerator.)

Salt and pepper to taste

Mix all together really well

Place in dish, top with a thin layer of ketchup
Bake at 350 for 40 minutes or until completely done in the center

To make meatballs, I use the same recipe only I add a can of Rotel (drained) and mixed in before forming the meatballs.  I form the meatballs  (approximately 1 to 1 1/2 inches in size) and bake them in the oven at 350 degrees for approximately 20 minutes.

  3. I use a very simple recipe method. I don't measure, I just 'eye-ball' it, but I'll do my best to get close to the amounts. I'll add it to the post later today in case someone else is interested.

  4. I am so impressed with all the meals you have ready to go there. It will be great going into the season of outside garden work.

    I restocked our freezer supply of muffins yesterday. One dozen blueberry and 2 dozen banana chocolate chip are ready to grab and eat.

    1. Lana, I'm really trying to get ahead in the kitchen with things that will make preparing a meal quicker and easier as gardening season will be starting soon. I want to be able to streamline meal prep but still have delicious and nutritious meals for us to eat.

  5. I've been very careful with spending for groceries lately, as we are trying to mainly live off our overflowing pantry & freezers. I am happy to report it's going well. There cupboards and freezers have a little more wiggle room now. We ate up some items that have been around for a while, as well as some half eaten bags of frozen items. That makes me very happy! Our very old Guinea pig also passed away, leaving us with 7 heads of romaine lettuce and a just opened big bag of spinach. Needless to say, we've eaten a lot of salads! We have decided to continue eating mainly from the pantry/freezers for another couple week, to help build up our savings a bit more.

    Having said that, yesterday I went with my mom to Costco. We had just been there a couple days before, and I shouldn't have needed anything. That was, until I noticed they had food saver bags on sale, as well as some other favourite food items. Well, I spent $99 of our $200 for 2 weeks grocery money to stock up on those sale items. So the next 2 weeks of groceries will definitely be selective in purchases! Apparently I love a challenge!!!
