In the Kitchen: This Cake is Delicious!

I don't know where I got the recipe for this cake, but I'm glad I found it!  Both hubby and I enjoyed a slice of it before we packaged up the rest to share with another family.  Here's the recipe along with the changes I made to it:

Olivia Waltons Applesauce Cake
1 cup butter
1 cup sugar
2 eggs
3 1/2 cups all-purpose flour (I used cake flour)
2 t. Ground cloves
1 t. nutmeg
1 t. cinnamon
1 t. baking soda
pinch salt
2 cups raisins (soaked in water for 30 minutes to soften)
1 cup walnuts  (substituted home-canned pecans)
2 cups applesauce  (I used home-canned applesauce)

Additional change I made:  Instead of using the ground cloves, nutmeg and cinnamon, I used 4 teaspoons of apple pie spice mix.

Bake for 50 minutes at 350 degrees  (I needed to cook it for 75 minutes in my oven instead of the called for 50 minutes)

Frosting   (I did not make the frosting nor add any other frosting)
1/4 cup butter
1 T. heavy cream
2 cups Confectioners sugar
2 T. bourbon or Vanilla

The cake was delicious!

  2. I have always wondered what was the recipe for Olivia Walton's applesauce cake! And, I wanted the applesauce cake from Little House on the Prairie. If I can stand long enough, I will bake this cake. Thanks.

  3. Can't wait to make this cake. I learn so much from you. Read your post on the bluebirds are nesting. it was filled with lots of good info. Mark Cuban who owns the Dallas Mavericks basketball team believes every should have access to medicine.
