Zucchini Flour



Zucchini is prolific in our garden and I’ve been on the search for ways to use it.  Here’s what I’ve found so far:

Zucchini Bread 

Zucchini Pineapple

Zucchini Flour

Yes, you read that correctly …  zucchini flour.  Here’s how to make it:

Wash and peel the zucchini

Using a carrot peeler, ‘peel’ the zucchini until it is all in small strips.  I used the zucchini that had gotten BIG.   I also sometimes peel the zucchini and slice it into 1/8 inch slices.  In fact, having tried both ways I think I prefer the later, but that's just my personal preference.  Both ways work fine.

Place in dehydrator and dry.

When drying is complete, put the dried zucchini strips in a blender, food processor or chopper and grind it into flour.

Okay, so now we have zucchini flour, what do we do with it?   Here are some ideas:

Substitute 1 cup for flour in bread recipes ...

As a filler in meatloaf, burgers, etc ...

or in squash/zucchini patties.

  1. This is so cool! This summer, I commented to my hubby about if this idea would work. Thank you. I will be making some this summer, hmmm I'm guessing August:) I thought I would try using it as a thickener for gravy, stew, etc. Hubby can't have wheat and we try not to eat a lot of grains. I'm almost excited for the abundance - yes, I know I'll probably regret saying that. Again thank you.

  3. Would you mind telling me what type dehydrator you own and how you feel about it? I'm looking into purchasing one. I know I can't afford one of the $200+ ones. I would like to have one so when I have fruit and vegetables about to go bad, I can just dehydrate them for later use.
    I welcome input from other readers also.

    1. Janell, I added a link to the post above of the one I have and use. Mine is a lot older and I've been using it for many years. But it is the same one. Someday I would like to have an Excalibur, but it's just not possible now so I use 'old faithful' and am thankful to have it.

    2. We have a huge yard sale here in Georgia next month called Peaches to Beaches. It runs over 200 miles along a highway. People set up all along the highway. I have my fingers crossed I can find at least one dehydrator. For some reason this tablet does not like that word. Every time it changes it to 'dehydration'

  4. Last summer I froze over 25 Ziplock bags of shredded zucchini. I have an old Oster that has all the attachments so that made that job easy. Each bag holds about 2 cups of shredded zucchini - perfect for zucchini bread. But, I would have no room for anything else in the freezer if I made 50 loaves of zucchini bread. So, now I grab a frozen bag of zucchini and whip up 2 loaves of zucchini bread. My almost 30 yr. old son HATES zucchini (except for the bread). When I make a thick stew or soup that has to cook all day, I put a bag of the shredded zucchini in there and he never knows the difference! I've heard about the powder, but never tried it. Can't wait to try it. Will have to scour the flea markets for another dehydrator or two.

  5. Patsy, have you heard of zucchini noodles? I finally tried them and we all loved them. I watched a video on making them on the blog "Against all Grain". We will be using them a lot more than wheat or rice noodles!!

    1. Yes Janet, we've added zucchini noodles to our diet in place of pasta and we like it too! I need to go check out the video though, I might learn something from it. Thanks for the tip!

  8. Is there a way to use your oven instead? I have an abundance of zucchini and was hoping to sneak dune zucchini flour into brownies. Could u dry enough within a few hours in an oven?

  10. I like to puree, peeled boiled zucchini to use as a soup base, was thinking about dehydrating some to see how that might work.

  11. Have used zucchini flour in soups but not baking. Wish there was there was more baking recipes for it. At least so I can start experimenting without wasting time or flour!

  12. have not yet tried it myself, but I hear that it can be subbed 1:1 for coconut flour in recipes. So, I am looking for a coconut flour cookbook. I am low carb and grain free so hoping for something I can bake with.
