30 Day Preserving Challenge: Day 3, Ginger

I had 3 pieces of ginger root that I needed to do something with so I decided to preserve it, and this is what I did …

First I washed the ginger root, purchased at the grocery store, and peeled it.  Then I got out my chopper, similar to this one, and chopped it up into approximately 1/4 inch pieces.
  


Next, I spread it out on the dehydrator trays and dried it at 125 degrees for approximately 4 hours.  When it was done, I took it out of the dehydrator and let it cool a bit, then put it in this jar …


I'll use this in flavoring water as I enjoy ginger water quite a bit and it's really good for you (just drop in the amount you want and let it rehydrate).  

The ginger in my garden is starting to come up now so I hope to have lots to dehydrate this fall.

One more thing … I didn't throw away the peelings, I'm dehydrating those too and I'll use them in making cider fire this fall.  Waste not, want not!
