A 'Carrot' kind of Day!

Our high temp today was 83, tomorrow we're supposed to go up to 86!  The weather was perfect for getting things done outside so I headed to the carrot bed ...


and started pulling carrots ...


Once I got them inside, I removed the green tops, washed them and chopped them into 2 - 3 inch pieces.  I laid them out on a hand towel to dry a bit and tomorrow I'll bag them up and freeze them.  I'll use them when making broth!


I saved the peelings too and will freeze them as well for the same purpose ... broth making.


For this harvest of carrots I decided to chop, flash freeze and add them to the freezer for use in soups, stews and casseroles.  These would also work really well in a rice and veggie side dish mixture.  (To see the chopper I use to chop vegetables scroll to the bottom of the page and click on the 'Manual Food Chopper' link.)

There're still several carrots left in the bed to harvest, so my 'carrot' work is just beginning!

  1. I love that chopper!!!! I've been through 3 of them over the years. The latest one, the bottom container seems to be of a thinner plastic, so not sure how long it's going to last. But it is a staple in my cupboard and I use it several times a week.

    1. Lori, same here. I go through one about once a year, but I haven't found anything of a better quality that is affordable.

  2. Those are beautiful carrots! We can't seem to grow a carrot more than 2 inches long. I did grocery gardening this morning and bought two three packs of colored peppers for 1.39 each. They have been cut and are in the freezer on baking sheets right now.

    1. Lana, I couldn't grow carrots either until I started growing them in raised beds, I really think it was our sandy soil that prevented them from producing. In the raised beds where the soil can be amended and it holds the nutrients, we've had much better luck.
