What I Did With a Tough Beef Roast!

Don't you just hate it when you cook a beef roast and the meat is tough and chewy!  That happened to us recently and I decided that I needed to do something to it to make it edible, I mean who wants to sit down to tough, chewy meat for a meal?  We don't, so I decided to do this ...

I cut it into chunks and canned it along with the seasonings and onions.  I had enough meat for 5 quarts and you know what I did to finish filling up the canner ... yes, ma'am, I added 2 quarts of pinto beans to it.

I'll use these 'beef tips' by thickening the broth and serving them over rice or pasta or mashed potatoes.  I know they'll be tender then!!!

Waste not!  Want not!
