Lots of Baking Going On This Week!

 I've been doing some baking this week to not only enjoy but to restock the freezer as well.  Having baked goods that we can grab and go with are perfect for those busy days when you need a quick snack.

Thus far I've baked banana bread ...


Here's the recipe I used ...  (It is so good!)
(This recipe came from a cookbook I've had for about 35 years.  It's one of those fundraiser type cookbooks compiled by teachers and parents from a private school.)

Banana Bread  (makes 1 loaf)

1 cup sugar

½ cup shortening

2 eggs

2 cups flour

1 tsp. baking powder

1 tsp. salt

½ tsp. baking soda

1 cup mashed bananas

Mix sugar, shortening and eggs together and then add dry ingredients.  Add bananas last.

Pour into greased and floured loaf pan; bake at 325 for 55 minutes.  Do not open oven door while cooking.


Then I made pumpkin muffins.

I didn't add the streusel topping.  These are delicious!


This fresh apple cake is just out of the oven.  

Of course we had to sample it ... the verdict ... yummy!

  3. I love your blog, Patsy. You are a real Proverbs 31 woman. I try, but I will never be as efficient as you. Still, I do the best I can with what I've got. Thank you for the inspiration to make the best use of my blessings.

    I like the banana bread recipe. Most of the ones I've seen call for nuts of some kind but this one doesn't. I don't really care for nuts in sweets. I can't wait to make this! Since I live alone I think I will freeze some individual slices to enjoy later.

  4. Yum! It is always good to have those baked goods tucked away! I added two dozen buttermilk biscuits this week. We also have a dozen banana chocolate chip muffins. That apple cake sounds like a great addition and great to freeze in slices. Hubby came in from the garage this week and told me we had cupcakes in the freezer and then realized it was something else so maybe I need to restock those, too.

    1. Lana, we find having quick home made grab and go foods on hand such a convenience and it helps us stay away from quick junk foods as well.

  5. I want to try this apple cake recipe! I'm so impressed that the recipe doesn't call for a whole cup of oil which I find tends to make a cake too greasy to be tolerated. Thank you for sharing all the recipes.
