Freezer Meal #2 for October 2022!

 Ever since I watched this video, I knew I wanted to make sourdough pancakes and today I did just that!  In fact, I added 5 meals of fully cooked, ready to thaw, heat and eat sourdough pancakes to the freezer part of my pantry.

Here's what I did it ...


I followed her recipe except I tripled it, added vanilla and pecan pieces.
I chopped up pecans I had canned in 2020 and used them.  Their roasted, nutty flavor really woke the pancakes up!


I cooked them per her instructions and set them on a rack to cool.
This is not a Pinterest pretty picture or an Instagram one for that matter, but it's what my skillet looks like when I cook pancakes!


Once the pancakes were completely cool, I layered them in between sheets of cut parchment paper and bagged them up.  This time I remembered to label the contents!!!


I cooked 26 pancakes and divided them into servings of 5 giving me 5 meals for the freezer.  What did I do with the one remaining ... LOL, you should know the answer .... I ate it!

I will definitely be looking forward to the times when we have a pancake breakfast for dinner!

Even though I added 5 meals to the freezer from today's cooking, I'm only counting this as one item towards my goal of 10 freezer meals in October.  Two freezer meals in the freezer and eight more to go!

  1. These sound delicious! We put the odd leftover pancake, waffle and French toast in the freezer until we have a strange combo meal one morning. LOL

    1. Lana, that's a good idea!!! Those 'strange combo meals' can turn out to be quite satisfying!

  2. True combo meals can be rather nice, but I'll just bet that pancake smelled so good you HAD to eat it, lol. Lisa at Farmhouse on Boone really utilizes her sour dough discard and has almost convinced me to try my hand at it once again. I loathed discarding the excess and so I eventually let mine die out. Now there are tons of recipes that use it up. She was making Croissants with it the other day!

    1. Terri, LOL, yes, that is exactly why that lone pancake never stood a chance!!! Discarding the excess sourdough starter has always seemed wasteful to me too. I'm glad there are those who have taken it upon themselves to find ways to use it and then to share those ways with others!
