Prepping for Freezer Meal Cooking

One of my goals for October is to add 10 freezer meals to the freezer part of my pantry.  I started some prep work yesterday to make that easier ...

First up was to cook some bacon for the freezer and to use in a couple of freezer meals I'll be making in the upcoming week ...


I lined half sheet baking pans with parchment paper and filled each pan with bacon slices ...


I baked the raw bacon in the oven for 30 minutes @ 350 degrees and this is what it looked like when it was done.  I placed it on a makeshift dripping rack to cool and for excess grease to drip off.

(I did save the bacon grease from the pans I baked the bacon in, it'll be used for seasoning purposes as needed.)


Before I started on the bacon though, I set a pot of basmati rice to cook on top of the stove.  I cooked 4 cups of raw rice which made 8 cups of cooked.  I bagged up and froze some and reserved some for the freezer meals I'll be making this coming week.

Having these two ingredients ready for use will make assembling the freezer meals easier.  Stay tuned for more prep work and the first freezer meals completed.

  3. I need to cook up some angel hair pasta for the freezer this week. I'll freeze it in Ziploc bags in the serving size for a diabetic person. Then we'll reheat at time of serving. I've tested and the freezer keeps the cooked pasta good for 8 ish months.

    1. You definitely have my curiosity up! I have never tried freezing cooked pasta without any sauces, etc. I'm going to have to give this a try, are there any tips you can share?

  4. Can you reheat the rice on the stove or do you microwave it.

    1. Ellie, I reheat rice in a microwave or in the oven. You could reheat it on a stove top but you would need to be mindful of it so it didn't burn.
