Potato Cakes

Today's post is short and sweet, and it's brought to you by my dear husband!

  He is taking such good care of me and when he asked if I thought I would enjoy some potato cakes I told him I would.  I haven't had much appetite the last couple of days, but potato cakes sounded good, so he turned some left-over mashed potatoes we had in the refrigerator into these delicious potato cakes ...

They were so good!  Here's his method ...

leftover mashed potatoes

diced onion

salt and pepper

egg

flour

There are no measurements because he didn't use any, he just eyeballed it and mixed it all together.

After he got it mixed to his liking, he formed and fried them up in a bit of oil in a skillet.

They were delicious!!!!
