Pecans

Back in December I needed about 3 cups of chopped pecans for some holiday baking.  Instead of chopping only what I needed, I decided to chop/grind up a whole 2 pound bag.




I used my food processor, the one I got at a thrift store about 25 years ago for $5.  It still works beautifully!


It filled up this bowl!


After I used what I needed I still had plenty left so I bagged, labeled and added them to the freezer part of my pantry.  The next time I need chopped pecans, I'll be ahead and already have them ready to use.

This is how I preserve chopped pecans.  To preserve half pieces long term, I can them using this method

  1. Patsy, I still haven't used the pecans my hubby picked from our tree last year. I will have to get the hammer out and get started on them. They aren't that easy to shell though unfortunately.

    1. Nanna Chel, since our pecan trees are too small to produce, I have to buy pecans so I buy them already cracked. Otherwise, it's a family affair and everyone gets to help shell the pecans!

  2. I keep all my nuts in the freezer and just pull them out when I need them. Well except my husband. He was spoiled a long time ago.

  3. I did the same thing when I was in the middle of my holiday baking. After getting out the chopper the second time I though to myself that it was silly to keep chopping bit by bit. I did leave a few whole ones just in case I need them. I keep all my nuts in jars in the door of the freezer all in a row. It is easy to open the door and grab the jar I need because I have them all labeled on the top.

    When I was a kid my parents often stopped at road side stands on road trips. A fond memory is buying pecans in Georgia. Dad would put two in his hand and squeeze and crack them both and hand them over the seat to us kids. I have tried to crack pecans that way many times and just cannot do it.

    1. Lana, I used to could crack 2 pecans in my hand at the same time the same way your Dad did, but not anymore!!!! I'm glad you have this memory!

  4. Patsy you are so right that preparing items ahead of time saves us so much time and also electricity costs.

    When we had our last vegetable gardens we had in the cottage we did huge bulk blanching and freezing sessions when we had an over abundance of each vegetable in the gardens and divided each vegetable into meal sized portions for the freezer. This is the supply we are now using in our new home until we save for timber to do raised garden beds in early April or May. Not having to buy vegetables has been a true blessing as they are so expensive to buy here.
