Succotash

I had never eaten the dish we call succotash until I met my husband.  It was different than anything my family had ever eaten so it was with some trepidation that I tried it for the first time.

I remember not really being impressed with it, it wasn't that I disliked it, but I didn't like it either.

Fast forward lots of years later and it has become one of my favorite dishes!

Recently, we pulled the ingredients from the pantry and made a big pot, intentionally making enough for leftovers:

ground beef (browned with onion)
whole kernel corn (drained)
lima beans (cooked)
bacon bits (or chopped up cooked bacon)

Cook the lima beans.
Dump everything in the same pot together when the lima beans are finished cooking.
Let simmer until you're ready to eat.
We like to add a dash of hot sauce to our individual servings according to our taste.

Like I said, it's now one of my favorite dishes and is very filling.

  2. Succotash that I grew up with was just corn and lima beans. It is interesting how different families have their own variations.
