Greenhouse Repair and Expansion

If you've been following me for a while you will know that last fall during Hurricane Florence and Hurricane Michael, our greenhouse sustained damage.

To be honest, I'm surprised it was even standing afterwards, but my husband built it to last when he built it several years ago and stood it did until Florence and Michael put in their appearances.

We were planning to expand it 'someday' before the hurricanes came through, but it soon became apparent after the hurricanes that that 'someday' had arrived!

We've been gathering supplies we would need ever since and now it's time to get to work and get the job done … expanding and repairing our greenhouse.

Here's how the hurricanes left it …


It's a pretty messy sight isn't it!!!

Pantry Remake: Part 1

People asked me where I store all my pantry items, I just laugh and say 'my whole house is a pantry, we just live in it."  While that is true, I do have a specific area that could be considered an 'official pantry.'  It's a closet that measures 4 feet wide and 4 1/2 feet deep.  The shelves are really deep, making it hard to know what I have in it and to keep it neat and organized.

I asked my husband if he would re-do the shelving, he agreed and since today was a cold and rainy day, we got started.

The first thing I had to do was empty it out and that was quite the job.  It took me about 2 hours to remove everything from it.  I had no idea I had as much stuff in it has I did!  My small house looks like my pantry exploded in it as I have jars, cans and containers sitting anywhere and everywhere I could find a place to put them until this project is completed.

Succotash

I had never eaten the dish we call succotash until I met my husband.  It was different than anything my family had ever eaten so it was with some trepidation that I tried it for the first time.

I remember not really being impressed with it, it wasn't that I disliked it, but I didn't like it either.

Fast forward lots of years later and it has become one of my favorite dishes!

Recently, we pulled the ingredients from the pantry and made a big pot, intentionally making enough for leftovers:

ground beef (browned with onion)
whole kernel corn (drained)

Weekly Goals: 2/4/2019

I'm a person who thrives on setting goals and working toward meeting them.  

I typically set 'just one' goal for each week above and beyond my normal activities. 

Sometimes its a small goal and sometimes its a big goal, depending on what I have going on at the time.

In this new feature I plan to start sharing that 'just one' goal with you here every week.  I hope to encourage you in your goal setting and to get encouragement from you in mine.

My goal for last week was to half-bake and freeze 12 sweet potatoes from our gleanings last fall.  I'm happy to say I met that goal.  I had wanted to do more but it just didn't happen.
